Monday menu and a giveaway announcement

Hi again, friends!

My weekend was packed full of family, food (my dad cooked omelets and grilled steaks for us even though he was the one visiting us!), fireworks, and good times by all. you thought I would say fun, didn't you?  I never made it to the farmers market but it is already on the calendar for this coming Saturday, and I am so ready to go!

I spent a lot longer than I normally do planning meals for the coming week, but I have quite a bit going on that I don't normally get to do.  We have friends coming for dinner tomorrow night, we will be celebrating another friend's new job Tuesday and I plan to have some sort of "healthy" dessert, and it is my turn to host book club on Thursday! since we read Bringing it to the Table: On Farming and Food, I better have something good to go with the farming/food/earth day theme.

I am really looking forward to all of this, but the menu planning has proved challenging.  I'm not used to so much at once!  In an effort to use as much as I have on hand, or use ingredients twice during the week, here is what the plan is:

Monday:
Chuck Roast from the farm with lots of veggies (recipe to come!)
Couscous
Strawberry Shortcake

Tuesday:
Left-overs (will someone please come up with a more glamorous word for that so I don't feel I need to add a caveat when I tell my hubby what we are having?!)
Apples and Strawberries with a creamy caramel dipping sauce to share with the friends

Wednesday:
Chicken and roasted carrots
something with fruit since we'll have plenty and some chocolate thrown in the mix I'm sure

Thursday:
Hummus,
goat cheese spread/dip (recipe also to come),
possibly a wheat berry salad,
I'm still thinking of what kind of sweet treat we will have (I'm not providing dinner, just snacks!)

Friday:
Salad with all the goodies left from the week

So far that's is the plan.  It's always held with an open hand though (I have not even made it to the grocery store, let alone the stove at this point!)
